Healthy And Tasty Recipes For Your Family
You will always be searching for some new and hitherto untried recipes. It does get monotonous to dig into the same foods again and again and your family looks up to you for yummy foods. Here are some recipes which are tasty as well as healthy making your lunch/dinner time with family enjoyable. With such recipes, your family will definitely look forward to meal times together. 1. Baked Potato Wedges

Potatoes are an all time favorite. These potato wedges are a sure hit as an accompaniment with your soup at meal time. Since they are baked, it suits the weight watchers too.

Ingredients
Potatoes – 8 (firm and medium sized)
Mixed herbs (thyme, rosemary, oregano, basil) - 1 ½ tsp
Garlic, finely chopped - 8 cloves
Red Chilly powder - ½ tsp
Lemon juice - 3 tbsp
Olive oil - 8 tbsp

Method
Preheat the oven at 180oC.
Retain the skins and cut the potatoes into wedges. Blanch these wedged pieces in hot salt water
Drain off completely and put them in a bowl. Add chopped garlic, red chilly powder, salt, mixed herbs, 6 tbsp of olive oil and lemon juice. Mix well such that the potato wedges are fully coated with the condiments. Place the wedges on a greased tray and drizzle the remaining oil over the wedges. Put it in the oven and bake for 15 to 20 minutes.

2. Penne in Thousand Island
This is a French salad and requires no cooking. Just toss around the ingredients and you have a colorful and tasty salad. The addition of the pasta with the vegetables makes it worth enough to be a meal when accompanied with soup and bread.

Ingredients
Boiled Penne pasta – 1 cup
Small sized green capsicum cut into small pieces – 1
Carrots, cubed and blanched – 1
French beans, cut in diamond shape and blanched – 5
Broccoli florets, blanched – ½ cup
Black Olives – 4
Lettuce leaves – 5
Cherry tomatoes cut into halves – 10
Basil- a few leaves (choose the sweeter variety)
Thousand island salad dressing – ½ cup

Method
Blanch all the vegetables separately so that they retain their color. In a large bowl add to the pasta, all the vegetables except cherry tomatoes. Toss well. Add the thousand island salad dressing (readily available at stores) and top off with the halved cherry tomatoes. The crunchy vegetables and the yummy salad dressing is a meal in itself.

3. Bread Rolls

Bread rolls are an all time favorite with kids and can be prepared in less time.

Ingredients
Bread slices – 8
Boiled potatoes- 2
Carrots, finely chopped – 1
French beans, finely chopped – 5-6
American sweet corn, shelled – ½ cup
Red chilly flakes – 2 tsp
Salt – to taste
Vegetable oil for shallow frying – 1 cup

Method
Take a pan and dribble oil. Sautee the finely chopped French beans, carrots till they are soft. Add the corn and mashed potato. Add salt and red chilly flakes. Mix well. Allow it to cool.
Shape the vegetable mix into rolls. Slightly dampen the bread after cutting out the corners. Place the vegetable roll in the center of the bread and close it firmly. Repeat the procedure with all the bread slices.
Heat the oil and shallow fry the rolls till they are golden brown and crisp.
